Ingredients brekky pie lo cal


The Ring
1 large Red Pepper
1 dash Olive Oil
The Filling
1 bunch Kale (2 handfulls)
8 medium Basil leaves
8 slice Pepperoni
4 Eggs
1 tsp Salt

how to make brekky pie lo cal


Slice Pepper into 2-3 cm high rings, removing seeds, aiming at 4 rings


Any left over Peppers can be finely diced and added to the Kale mix in step 5


Blanch ya Kale


Finely dice ya Kale, Basil and Pepperoni


Mix Kale, Basil and Pepperoni together


Split the egg white from yolk, keeping the yolk, and add egg to Kale mix


Heat a large pan to 1 googol Kelvin, spritz some olly oil in there


Clumsily lay down each pepper ring into the pan, browning one side, then flip, with gusto!


Fill each ring on the pan with equal portions of the Kale mix, cook for about 3 mins or until 3 minutes is up


Carefully flip each ring, the is optional, only attempt this if you're alone at home, or an expert egg handler


Add 1 egg yolk gently to each ring, and cover if you have a lid, if not, get a lid. A glass one is best.


Cook to yolky preference, I like mine slightly runny
