cheddar chicken casserole

Ingredients cheddar chicken casserole


12 oz good quality extra sharp cheddar cheese shredded
1 1/3 can cream of chicken soup
3/4 cup mayonaisse
3/4 cup sour cream
1 tbsp lemon juice
1 pepper to taste
6 cup cooked white rice
2 1/2 lb cooked chicken breast cut into bite sized pieces

how to make cheddar chicken casserole


Preheat oven to 350, spray 13"by 9"casserole with cooking spray


Add rice to casserole dish


In medium bowl, mix soup, mayo, sour cream,lemon juice, pepper, and half the cheese. yes, this dinner is going right to our butts :P stir to combine


Mix in chicken, stir to coat. spread evenly over rice.


Sprinkle with remaining cheese


Cook about 40 minutes until cheese is golden brown.


Note- this is one of those things that tastes even better the next day, but we rarely leave any!
