crispy potato rounds

Ingredients crispy potato rounds


2 large baker potatoes russet
4 tsp olive oil divided
1/2 tsp garlic powder
1/2 tsp parsley
1 salt and pepper to taste

how to make crispy potato rounds


In microwave, cook cleaned , skin on potatoes until tender. You may bake them in the oven until tender. Times depend on potato size.


Once potato is cool to touch, cut medallion slices 1/2" thick.


In hot skillet on just below medium heat add 2 teaspoons oil.


Add in potato slices and leave unturned until bottom gets crispy and golden. About 10 minutes.


Drizzle next 2 teaspoons of oil on top of potatoes along with salt, pepper and garlic powder and parsley


Flip and cook until crisp on second side.


Serve with your favorite breakfast or as a different potato side with hamburgers or chicken!
