enchilada casserole

Ingredients enchilada casserole


1 lb chicken or ground beef
1/2 onion
1 can refried beans
1 can diced tomatoes
1 can diced green chilis
1 can red enchilada sauce
1 can green enchilada sauce
1 packages corn tortillas
2 cup shredded cheddar cheese

how to make enchilada casserole


Preheat oven to 375


Cook hamburger or chicken. Set aside.


Combine all ingredients (except for tortillas and cheese) in a large bowl


Cut tortillas into 1 inch squares


Place half of the tortillas in the bottom of a casserole dish.


Pour half of the sauce mixture over the tortillas.


Repeat layering with tortillas and sauce


Top with cheese


Cover with tin foil and cook for 45 minutes
