Ingredients grilled scallops
16 large scallops rinsed well
4 tsp sugar (or 8 teaspoons sugar substitute)
4 to 6 fresh minced garlic cloves (or 1 to 1 1/2 teaspoons minced garlic in a jar)
4 green onions minced
2 tsp paprika
2 tbsp lemon juice
1/2 cup plus 2 tablespoons olive oil divided
1 pepper to taste
how to make grilled scallops
Wash scallops and pat dry.
Brush with 2 tablespoons olive oil.
Combine the sugar, garlic, green onions, paprika, 1/2 cup olive oil, lemon juice and pepper.
Mix well.
Heat your grill or grill pan to high heat.
Place the scallops on the grill for 3 to 5 minutes per side, basting generously and frequently with the prepared sauce.
You want the scallops to be lightly browned on each side.
Be careful not to leave them on too long, they should be firm but not overcooked.
Overcooking can make them rubbery.
