Ingredients red quinoa avocado salad
7 oz red quinoa
12 oz super-sweet corn
1 cup fresh cilontro
1 cup green onion
2 plum tomatoes
2 avocados
1/2 cup lemon vinaigrette
1/2 tsp salt
1/2 tsp pepper
how to make red quinoa avocado salad
cook the quinoa as directed, chill for 20 minutes
chop cilantro finely, slice onions thinly, dice tomatoes, peel and pit avocado then cut into cubes
combine all ingredients including dressing until well mixed. season with salt and pepper to taste.
