warm rice olive salad

Ingredients warm rice olive salad


4 green onions
1 clove garlic very fine chopped
1 red bell pepper
1 small can sliced black olives
12 cherry tomatoes
4 tbsp flat leaf parsley chopped
3/4 tsp cumin
1 salt and pepper to taste
2 tbsp olive oil
3 cup cooked & cooled (but still warm)long grain white rice
1 juice from half of a lemon
3/4 tsp mild chili power

how to make warm rice olive salad


set cooked cooled but still warm rice to the side.


dice red pepper.


chop green onion.


in a skillet or pot add oil, onion, olives, red pepper, chili powder, cumin, garlic and lemon juice.


turn heat on high and cook for only 3 minutes until hot and parsley gets soft and wilted


meanwhile quarter the tomatoes.


add to pot\skillet. saute for another minute until tomatoes are just warm.


turn off heat and add rice. toss to coat.


pour into serving bowl.


serve.


great served with fajitas! :) or tacos.


serves about 4-5.
